Quick Spanish Omelette

Ingredients

  • 1 cup vegetables (onions, asparagus, capsicum, tomato, spinach, parsley, chives, etc), finely chopped
  • 1 whole egg
  • 2 egg whites
  • 1 tablespoon water
  • Pinch of cayenne powder

Method

  • Heat up a non-stick frypan.
  • Lightly stir-fry vegetables, then remove from pan.
  • Whisk egg with egg whites, water and cayenne powder.
  • Pour into pan and cook lightly.
  • When almost cooked, top with vegetables and flip to heat through.
