Lamb Fillet with Sicilian Vegetables

Ingredients

  • 1 x150g lamb fillet
  • 2 baby eggplant, cubed
  • 1 zucchini, cubed
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 2 tomatoes, chopped
  • 1/2 red capsicum, chopped
  • 4 black olives
  • 1 teaspoon chopped parsley
  • 1 tablespoon vinegar
  • Black pepper
  • Vegetable salt, if desired

Method

  • Saute eggplant, zucchini and garlic in olive oil for 2 mins.
  • Add tomatoes and capsicum.
  • Cover and simmer for 20 mins.
  • Stir in olives, chopped parsley and vinegar
  • Season to taste.
  • Bake, grill or barbeque whole lamb fillet until cooked to your liking.
  • Serve in slices with vegetables.
