Chicken and Bean Salad

Ingredients

  • 1 cup steamed chicken fillets, chopped
  • 2 cups vegetables (celery, red onion, parsley, capsicum etc), chopped
  • 400g can white beans or 1 cup cooked beans
  • Juice of 1/2 lemon
  • 2 tablespoons olive oil

Method

  • Combine all ingredients and dress with lemon juice and olive oil.
